Dried fig paste

A smooth, homogeneous, and concentrated paste made exclusively with dried and ground figs (without stems). It has a deep and intense flavor, expressive sweetness, and a solid, dense structure. Soft consistency. Its texture is creamy with a subtle seed crunch. A superfood concentrate.

Fig paste - unlike other pastes - is made cold, through a mechanical process of grinding the dehydrated fig, so its nutritional profile remains virtually intact.

It is ideal for energy bars ( fig bars ) due to its energy content and consistency. It is available in cylindrical shapes, in bars for the 1 kg and 500 g formats, and in discs or small alfajores for the 250 g and 100 g formats.

La Breva: The luxury of December

We know you never dared to ask, so here goes: brevas and figs come from the same tree. Brevas are the first harvest of the year (December-January) and are generally a denser, fleshier fruit. Figs are the subsequent harvest. At Doblevalle, we're preparing for the breva harvest, which in Chile takes place in December. Botanically, it's not a different fruit from the fig, but it's defined by a different biological production cycle. It's the first harvest of the year of the Black Mission variety (which has two harvests). Its arrival marks the beginning of the season, and although its flavor profile is less intense than that of the fig that will ripen in March, its historical and commercial value lies precisely in its earliness, size, and firmness, offering a high-quality product for the early summer fresh market.
